Pizza Pasta Salad

INGREDIENTS:

  • 1 lb. rotini macaroni, cooked and drained
  • 3 med. tomatoes, diced
  • 1 lb. cheddar cheese, cubed
  • 3 oz. pepperoni, sliced
  • 3/4 c. olive oil
  • 2/3 c. grated Parmesan cheese
  • 1/2 c. red wine vinegar
  • 2 tsp. oregano
  • 1 tsp. garlic powder
  • 1 tsp. salt
  • 1/4 tsp. pepper

DIRECTIONS:

In a large bowl, combine macaroni, tomatoes, cheddar cheese, and pepperoni. In a small bowl, combine oil, Parmesan cheese, vinegar, and seasonings; pour over macaroni mixture. Cover and refrigerate for several hours. Serves 14 people. Note: May add green onions if desired
