Fruity French Toast


  • 1 loaf French bread
  • 1/4 c. blueberries
  • 1/2 banana, mashed or pears
  • 1/2 c. milk
  • 1/2 t. cinnamon
  • 1 egg


Beat egg with milk and cinnamon; set aside. Slice French bread or homemade bread into 1″-1 1/2″ slices. With a sharp knife cut a slit into the top of each slice to form a pocket. Do not cut through bottom or sides. Spoon fruit into pocket. Hold top shut and dip each side lightly into egg mixture and fry until golden brown and cooked through. Makes 1 thick slice.
