Lemon-Mint Quencher

INGREDIENTS:

  • 5 c. Water, divided
  • 10 fresh Mint leaves
  • 1 c. Lemon juic
  • 2/3 c. Honey
  • 1 tsp. Lemon peel

DIRECTIONS:

In a blender combine 1 cup water and mint leaves. Cover and process 1 minute. Strain and discard mint. Add rest of ingredients; stir until blended. Cover and refrigerate for at least 2 hours. Serve over ice. Note: Can garnish with mint sprigs
