Campfire Corn Bread
INGREDIENTS:
- 1/2 c. shortening
- 1/2 c. brown sugar
- 2 eggs
- 1 1/4 c. cornmeal
- 1 1/2 c. flour
- 1 tsp. salt
- 1 tsp. baking powder
- 1 tsp. soda
- 1 c. buttermilk
DIRECTIONS:
Cream the sugar and shortening; add the eggs and beat until smooth. Add the dry ingredients and alternately add the buttermilk. Pour in an iron skillet sprayed with nonstick cooking spray. Bake over the campfire.
