Pumpkin Ice Cream Dessert
INGREDIENTS:
- 10 whole graham crackers
- 1/4 c. sugar
- 4 Tbsp. butter, softened
- 1 1/2 c. pumpkin
- 1-2 c. sugar
- 1/4 tsp. salt
- 1 tsp. cinnamon
- 1/4 tsp. ginger
- 1/4 tsp. nutmeg
- 1 gal. vanilla ice cream, softened
DIRECTIONS:
Crush crackers and mix with the 1/4 cup sugar and butter. Reserve 1/4 cup crumbs and press the rest into a 9″x13″ pan with lid. Chill. Mix remaining sugar, salt, and spices; add pumpkin and mix. Blend with ice cream and spread on top of chilled crumbs. Sprinkle with reserved crumbs and freeze until firm. One cup of pumpkin gives it a light pumpkin taste. Serves 15 people.
