Blueberry Coffee Cake
INGREDIENTS:
- 1 egg
- 1/2 c. yogurt or sour cream
- 1/4 c. butter, melted
- 1/2 tsp. salt
- 1 tsp. lemon peel
- 1 1/2 c. blueberries
- 1 1/2 c. flour
- 1/2 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. cinnamon
Topping:
- 1/3 c. sugar
- 1/3 c. flour
- 1/3 c. chopped nuts
- 1 tsp. cinnamon
- 2 Tbsp. cold, sliced butter
DIRECTIONS:
Stir together egg, yogurt, butter, salt, lemon peel and blueberries. In another bowl mix remaining ingredients. Mix wet ingredients into dry mixture until mixed. Combine topping ingredients till crumbly. Bake in greased 8×8 pan at 375° for 30-35 minutes.
