Blueberry Jelly Rolls


  • 4 egg whites
  • 3/4 c. sugar
  • 3/4 c. flour
  • 1 tsp. baking powder
  • dash of salt
  • 1 tsp. vanilla


  • 8 oz. cream cheese, softened
  • 1 c. powdered sugar
  • milk
  • 1-2 c. fresh blueberries


In a mixing bowl, beat egg whites until very stiff. Add sugar and beat until glossy. Add flour, baking powder, and salt. Mix well and add vanilla. Line 10″x15″ jelly-roll pan with wax paper. Pour batter into pan and bake at 350° until light brown, approximately 10-15 minutes. Remove from pan immediately. Put another piece of waxed paper on top, then roll up in dish towel until cool. Filling: Beat cream cheese and sugar, add a little milk to make filling spreadable. Beat well and fold in blueberries. When jelly roll is cool, unroll and spread with filling, roll up again. Chill.
