Breakfast Crepes


  • 1/2 c. coconut milk
  • 3/4 c. water
  • 2 lg. eggs
  • 2 Tbsp. butter, melted
  • 1 c. brown rice flour
  • 1/2 tsp. salt
  • 1 tsp. stevia blend
  • 1/2 tsp. vanilla
  • 1/4 tsp. baking powder


Combine the wet ingredients in one bowl and mix with a whisk until well blended. In another bowl combine dry ingredients, mix well. Combine the wet and dry ingredients to form a thin batter. Heat an 8 inch skillet on medium heat and add a small amount of coconut oil to the pan. Pour about 1/4 cup batter into the hot skillet. Swirl skillet until bottom is covered with batter. Cook the crepe about 1 minute. Loosen the edges and gently flip over and cook another minute. Transfer to plate and fill with favorite toppings, cottage cheese with fruit, bakes apples and cinnamon, strawberries and yogurt – the possibilities are endless.
