Chicken Fried Rice

INGREDIENTS:

  • 1 1/2 c. rice
  • 1/4 c. vegetable oil
  • 2-21/2 c. diced chicken
  • 3 1/2 c. broth/water
  • 1/3 c. reduced sodium soy sauce
  • 1/2 c. chopped onions
  • 1/2 c. celery
  • 1/4 c. peppers
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. shredded cabbage, optional

DIRECTIONS:

Cook rice in hot oil in skillet until golden brown. Stir constantly as it burns easily. Parboiled brown rice or basmatic rice works well. Reduce heat and add broth, soy sauce, seasonings, and chicken. Cover and simmer 30 minutes. Add chopped vegetables, cook 10-15 minutes longer. If desired, stir in cabbage and serve once. Stir-fry sauce may be used. Serves 8-10 people. Note: May add vegetables of your choice.
