Chocolate Linzer Cookies

INGREDIENTS:

Pudding:

  • 3/4 c. softened butter
  • 1 c. sugar
  • 2 eggs
  • 1/2 tsp. almond extract
  • 2 1/3 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1 c. melted semi-sweet chocolate chips
  • 6 Tbsp. raspberry jam
  • powdered sugar

DIRECTIONS:

Mix together butter and sugar. Add eggs one at a time. Beat in extract. Combine flour, baking powder, salt and cinnamon; add to creamed mixture. Chill 1 hour. Divide dough in half; roll out one portion 1/8 inch thick; cut with a 2 1/2-inch round cutter. Roll out remaining dough; cut with a 2 1/2-inch doughnut cutter with center cut out of cookie. Bake at 350° for 8-10 minutes. Spread melted chocolate over bottom of solid cookies. Place cookies with cutout center over chocolate. Sprinkle with powdered sugar. Spoon 1/2 teaspoon jam in center of each cookie. Makes 2 dozen. Fun to make with different cut-outs…gingerbread men,valentines, etc…
