Cinnamon Muffins

INGREDIENTS:

  • 5 Tbsp. butter
  • 5 Tbsp. shortening
  • 1 c. sugar
  • 2 eggs
  • 3 c. flour
  • 1 tsp. salt
  • 1/2 tsp. nutmeg
  • 3 tsp. baking powder
  • 1 c. milk

Topping:

  • 1 c. butter
  • 1 c. sugar
  • 1 Tbsp. cinnamon

DIRECTIONS:

Grease a 24 hole mini muffin pan. Cream butter, shortening and sugar; beat in eggs. Combine flour, salt, nutmeg and baking powder. Stir in flour mixture and milk alternately into creamed mixture just until combined. Fill muffin cups 3/4 full. Bake at 350° for 20 minutes. Cool for 10 minutes; dip each muffin in melted butter then roll muffin in cinnamon/sugar blend.
