Coffee Mocha Pudding

INGREDIENTS:

Pudding:

  • 6 c. Milk
  • 3 tsp. Instant coffee
  • 3/4 c. Perma flo
  • 1 c. Sugar
  • 1 c. Brown sugar
  • 2 Tbsp. Brown sugar
  • 2 Tbsp. Browned butter
  • 1 tsp. Vanilla

Crust:

  • 3 c. Crushed chocolate sandwich cookies
  • 1/3 c. Melted butter
  • Cream Cheese Layer:
  • 1 (8 oz.) Cream cheese
  • 1 c. Powdered sugar
  • 2 c. Cool Whip

Topping:

  • 1 (8 oz.) Cool Whip

DIRECTIONS:

Pudding: Heat 5 cups milk; add coffee. Meanwhile, mix together sugar and perma flo, then add remaining cup of milk and blend well. Stir this mixture into the hot milk and continue stirring until it boils. Remove from heat. Add browned butter and vanilla. Cool. Crust: Make a crust with the cookies and butter; press into a 9″x13″ pan. Cream Cheese Layer: Mix together cream cheese and powdered sugar, then beat in the 2 cups Cool Whip. Put this mixture on top of the cookie crust. When pudding has cooled, pour it onto cream cheese mixture and top with 8 ounces Cool Whip. Garnish with cookie crumbs
