Peanut Butter Muffins

INGREDIENTS:

  • 1/2 c. peanut butter
  • 3 T. vegetable oil
  • 1/4 c. sugar
  • 1 1/2 c. milk
  • 1 c. flour
  • 1 c. whole wheat flour
  • 1/2 t. salt
  • 1 egg
  • 1 T. baking powder
  • peanut butter to spoon on top

DIRECTIONS:

Blend peanut butter, oil, sugar and salt. Beat in the egg, then stir in milk. Add dry ingredients and mix just enough to thoroughly moisten. Spoon into greased or paper-lined muffin tins. Put a teaspoon of peanut butter on top of each one. Bake at 400° for 20 minutes. Good served warm with the melted peanut butter spread over the top
