Pumpkin Cinnamon Rolls

INGREDIENTS:

  • 1 1/2 c. milk, scalded
  • 1 c. pumpkin
  • 1/2 c. sugar
  • 2 tsp. salt
  • 1/2 c. butter
  • 2 eggs
  • 2 Tbsp. yeast
  • 1/2 c. warm water
  • 7 c. flour

 

  • Toppings:
  • butter, melted
  • cinnamon
  • brown sugar
  • instant coffee

DIRECTIONS:

Pour milk over pumpkin, salt, sugar, and butter. Cool. Add eggs, yeast, water and half of the flour. Beat well, add remainder of the flour. Let rise and then roll out. Topping: Put on desired amounts – spread with butter and sprinkle cinnamon, brown sugar, and instant coffee on top of butter. Roll up, cut and put in greased pans of your choice; let rise in pans. Bake at 350° for 20 minutes. Frost with your favorite frosting.
