Sausage Mushroom Quiche

INGREDIENTS:

  • 1/2 lb. bulk Italian sausage, cooked
  • 1 c. shredded Swiss cheese
  • 1 (4 oz.) can mushroom stems and pieces, drained
  • 1/4 c. finely chopped green pepper
  • 3/4 c. half and half
  • 1/4 tsp. salt
  • 1 Tbsp. dried minced onion
  • 5 eggs
  • 1/2 tsp. ground mustard
  • 1/8 tsp. pepper
  • 9″ pie shell

DIRECTIONS:

In a bowl, combine sausage, cheese, mushrooms, green pepper and onion; sprinkle into pastry shell. Combine the eggs, cream, mustard, salt and pepper. Pour over sausage mixture. Bake at 375° for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting. This is good to use for brunch. Yield: 8 servings
