Sweet Potato Pie

INGREDIENTS:

  • 1 (9″) pie shell, unbaked
  • 2 eggs
  • 2 c. mashed sweet potatoes
  • 3/4 c. sugar
  • 1/2 tsp. salt
  • 1 1/2 tsp. pumpkin pie spice
  • 1 (12 oz.) can evaporated milk

DIRECTIONS:

Heat oven to 425°. Beat eggs slightly; beat in remaining ingredients. Pour into pie shell. Bake 15 minutes. Reduce oven temperature to 350° and bake 45 minutes longer. (Center should rise slightly.) Cool. Serve with whipped topping.
