Winter’s Day Soup

INGREDIENTS:

  • 1 c. Celery
  • 1 c. Carrots
  • 1/2 c. Onions
  • 3 med. Potatoes
  • 1/2 c. Butter
  • 1/2 c. Flour
  • 4 c. Milk
  • 1 lb. Cheese, grated
  • Salt to taste
  • Pepper to taste
  • 1 c. Diced Ham

DIRECTIONS:

Chop vegetables and cook in 3 cups water until tender. In saucepan, melt butter and stir in flour. Add milk to flour mixture and heat on medium heat until boiling. Boil for 1 minute. Stir in cheese, then add salt and pepper. Add mixture to the cooked vegetables, including the water. Heat, but do not boil.
