Zucchini Meatloaf
INGREDIENTS:
- 2 lb. Ground beef
- 1 c. Dry Italian bread crumbs (or regular crumbs plus 1 t. Italian seasoning)
- 1/2 c. Grated Parmesan cheese
- 1 c. Milk
- 1/4 t. Salt
- 1 Egg, beaten
- 1 small Onion, chopped (optional)
- 2 t. Beef bouillon
- 1/2 t. Baking powder
- 2 c. shredded zucchini
Sauce:
- 2/3 c. Brown sugar
- 1 c. Ketchup
- 1 T. Mustard
DIRECTIONS:
Combine all meatloaf ingredients and mix thoroughly. Press into a 13″ x 9″ baking dish. Sauce: Mix together. Pour over top of meatloaf. Bake at 350° for 1 hour and 15 minutes. Yield: 8-10 servings.
