Zucchini Meatloaf

INGREDIENTS:

  • 2 lb. Ground beef
  • 1 c. Dry Italian bread crumbs (or regular crumbs plus 1 t. Italian seasoning)
  • 1/2 c. Grated Parmesan cheese
  • 1 c. Milk
  • 1/4 t. Salt
  • 1 Egg, beaten
  • 1 small Onion, chopped (optional)
  • 2 t. Beef bouillon
  • 1/2 t. Baking powder
  • 2 c. shredded zucchini

Sauce:

  • 2/3 c. Brown sugar
  • 1 c. Ketchup
  • 1 T. Mustard

DIRECTIONS:

Combine all meatloaf ingredients and mix thoroughly. Press into a 13″ x 9″ baking dish. Sauce: Mix together. Pour over top of meatloaf. Bake at 350° for 1 hour and 15 minutes. Yield: 8-10 servings.
